The worldwide organic food market continues to grow, and it's North America that is leading the charge. According to a Research Institute of Organic Agriculture study, North America had a combined organic food market value of $48.7 billion as of 2017. The United States, meanwhile, had the largest market among all countries.

Organic product sales in the US reached a record $49.4 billion in 2017, marking a 6.4-percent increase from the year prior. This represented 5.5 percent of all food sold across various retail channels. The primary driver of such sales is the organic fruits and vegetables group, responsible for $16.5 billion in sales and 14.1 percent of all fruits and vegetables sold in the country.

To meet this demand, there have been drastic increases in land dedicated to the production of organic products. According to the data service Mercaris, there were 6.5 million acres of registered organic land in August 2018 and 460 new operations established in the previous seven months.
